Stuffed Capsicum


INGREDIENTS:


Capsicums 6 medium sized

Potatoes 2

Green chillies 2 finely chopped

Onion 1 finely chopped

Ginger 1 inch piece finely chopped

Paneer 100 gms

Cashewnuts a few

Raisins a few

Salt to taste

Red chilli powder 1/2 tsp

Garam masala powder 1/2 tsp

Cumin powder 1/2 tsp

Amchur powder 1/2 tsp

Oil 1 tblsp

Cheese 3 tblsp grated

Coriander leaves a few finely chopped

METHOD


Wash the capsicums, slice off thinly from the top and remove the seeds to make it hollow.

Boil, peel and mash the potatoes.

Grate the paneer.

Grind the cashewnuts coarsely.

Mix well the mashed potatoes, grated paneer, cashewnuts, raisins, salt, red chilli powder, amchur, cumin powder, garam masala powder and coriander leaves.

Preheat oven to 225 C.Heat oil in a pan, add chopped onion, fry and add the green chillies and ginger.

Add the potato mixture, mix well and cook for 2 mins.

Divide this mixture evenly and stuff into the 6 capsicum shells.

Sprinkle grated cheese on top of each stuffed capsicum and place on baking tray.

Bake the capsicums at 225 C for 15 minutes.Serve immediately.
